Saikyo zuke is a dish in which fish filets are marinated in Kyoto's traditional Saikyo miso. Hokke is a white-fleshed fish with outstanding fat content, and it easily falls apart in the mouth. When grilled, the fish is full of aroma and mild flavor. The mellow Saikyo miso enhances the deliciousness of Spanish mackerel and red fish, which are thick and have a good degree of firmness. The plump and moist flesh is also very satisfying. You can enjoy the different textures and flavors of each.
